Chettinad chicken

Chettinad Chicken

There can be many variations of this recipe ,depending on the spice level . The recipe that I am sharing today is milder version of the original one to suit all taste buds . 

 




Ingredients :
  • 3 large onions ( finely chopped) 
  • 2 large tomatoes ( finely chopped) 
  • 3 green chilies
  • 2 inch piece of ginger
  • 15 cloves of garlic
  • Salt as per taste 
  • Turmeric powder 

for the Chettinad Masala :
  • 1 cup of coconut ( grated) 
  • 1 table-spoon of coriander seeds
  • 5-6 whole red chilies 
  • 1 tea-spoon of cumin seeds
  • 1 table-spoon fennel seeds
  • star anise- 2 
  • cloves - 4 to 5 
  • cardamom - 4 to 5 
  • pepper corns - 8 to 9 


Start with the ingredients 

marinate the chicken in salt and turmeric powder for at least two hours

fry the onions,green chilies , ginger-garlic paste in salt and turmeric till raw smell is gone. 

add the marinated chicken pieces 

 roast for 2-3 minutes

Add the chopped tomato 

roast well

In the meantime , get the Chettinad Masala ingredient ready 

In a separate pan,dry roast coconut for 1 minute and remove .

Dry roast the rest of the spices .

till they change colour.


Grind to a fine powder

like this .

Add the powder to the chicken in the pan .

Roast well and then  add water, simmer for sometime. 




Serve with Chapati ,paratha or steamed rice .
